Bar See See, a showcasing of baijiu – China’s national spirit – has launched at The Porter House precinct in Sydney.
The bar promises innovative cocktails and cultural storytelling, and joins a lineup of offerings from Trippas White Group at the five-level heritage-listed venue. This includes Victor Liong’s Lee Ho Fook, Porter House Grounds and Cellar Door, and Porter and Alia event spaces.
It will pair Moutai-driven creations (a style of baijiu which translates to clear liquor in Mandarin) with a significant whisky selection, beer and spritz on tap, and a wine offering curated by group sommelier Louella Mathews.
Under the direction of venue manager Nance Liong it will embody the spirit of refined fun and cultural fusion.
Liong says the 100-seat venue is about reimagining Moutai for modern drinkers and is a space where “curiosity meets craft”.
Launching with a guest residency, Bar See See will host husband and wife bartending duo Priscilla Leong and Paul Hammond. The pair are known in internationally for their brand, The Flowing Bowl, which has collaborated with brands such as Chanel, Asia’s 50 Best Restaurants, Rèmy Cointreau International, and Lexus Australia.
Leong won Australian Bartender of the year in 2022 and continues to steer the helm of The Flowing Bowl’s creative projects.
Complementing the drinks program is an Asian-inspired bar menu by Lee Ho Fook Executive Chef Brad Guest. The menu has been crafted for sharing, and includes Sydney Rock oyster with shallot and ginger vinegar, salt and pepper lotus chips, spiced red skin peanuts, spiced pickled vegetables, and duck croquettes.
The launch menu will feature signature drinks including the High Low Martini, Kelis Colada, and Dragon’s Eye Punch. The staff’s pick is a Moutai Chun 1992 and Lochlomand 18 year old whiskey infusion with osmanthus and goji. It also includes twists on the classics including a Sydney Vesper, Daiquiri See See and Lao Gan Margarita.
Bar See See is open from 4pm, Wednesday to Saturday.
