Behind the scenes videos posted on social media by hospitality giant Merivale has shown that restoration work at Club Rose Bay is well underway.
Members of the shuttered Club Rose Bay overwhelmingly voted in favour at the beginning of the year to enter into a club operations management agreement with Merivale.
The club entered into voluntary administration at the end of August 2024. Club Rose Bay’s 2023 financial report showed that in 2022, it was trading at a loss of $350,000. In 2023, that number amounted to just over $40,000.
Under the agreement, Merivale will be the service provider to the club and oversee club operations, including managing the food and beverage offering and events. However, the board will retain full control of the club.
“Merivale’s hospitality and operational expertise will allow us to provide members and guests with a great quality, yet affordable, food and beverage offering,” club chair John Bax said previously.
Latest updates by Merivale founder Justine Hemmes indicated the new look Club Rose Bay will feature a games area with pool tables, a sports bar with large screens for sports viewing, and a cocktail and DJ record-style bar. Plus, there’ll be outdoor dining, alongside a pickleball court and a half basketball court. There’s also an open-plan kitchen with a wood-fired pizza oven.
Hemmes said in the video that the idea is create an “inclusive space where everyone is welcome”, including dogs.
Merivale has also announced that Mike Eggert, the chef behind Merivale’s popular Totti’s restaurants, will be opening a new Italian eatery called Notti’s at the club.
While a reopening date has yet to be confirmed, Club Management understands it is slated for later this year.
