Felons Brewing Co is expanding its coastal footprint with the launch of Felons Seafood, a new seafood-focused dining room and bar opening late-June 2025 at Manly Wharf. The waterfront venue will be led by Luke Bourke, the current The Sydney Morning Herald Good Food Guide 2025 ‘young chef of the year’, and is looking to deliver a relaxed, produce-driven dining experience celebrating the best of Australia’s oceans and coastlines.
The Artemus Group – the same property developer behind Brisbane’s nine-acre Howard Smith Wharves, which includes the Felons Brewing Co site – is also behind the Manly Wharf precinct development that Felons Seafood will form a part of. Artemus took ownership of Manly Wharf in April 2024, aiming to transform the waterfront precinct into a vibrant hub for community and culture.
Felons Seafood will offer a seasonal menu focused on responsibly sourced Australian seafood, paired with Felons’ signature brews and a curated list of wines and coastal cocktails.
“We’re thrilled to have Luke Bourke lead the kitchen at Felons Seafood,” said Adam Flaskas, co-founder and director of Artemus Group and Felons Brewing Co. “His experience and vision will bring a fresh perspective to the seafood scene in Manly, and we look forward to offering locals and visitors a place to enjoy fresh, simple, and high-quality seafood right on Sydney Harbour.”
The venue promises a refined yet approachable menu, designed by Bourke in collaboration with former Rockpool culinary director and now Artemus culinary consultant, Corey Costelloe. Together, they plan to showcase premium Australian seafood.
The menu features raw bar favourites, whole grilled fish, and reimagined seafood classics, highlighting Bourke’s contemporary style and Indigenous heritage, alongside Costelloe’s simple, produce-driven approach and commitment to using best-in-class local produce, all served with views across Sydney Harbour.
“I’m excited to be back working alongside Corey to bring this vision to life,” said Bourke. “Our goal for Felons Seafood is to showcase honest flavours and exceptional produce in a thoughtful yet approachable way. We’ll be working closely with local fishers and growers to keep the menu fresh, simple, and grounded in the best of what our local waters and producers have to offer.”

Felons Brewing Co was established by Adam Flaskas and Paul Henry alongside CEO Luke Fraser; brand director Dean Romeo; and brewery director Tom Champion.
Felons Seafood is due to open late-June at Manly Wharf in Sydney.
