House Made Hospitality launches butter-washed winter cocktails

House Made Hospitality has unveiled a limited run of winter cocktails built around butter, soon to be available at four of the leading hospitality group’s venues.

Developed in collaboration with Pepe Saya, the four cocktails were curated by House Made Hospitality’s bar leads, including Abel Talos and Remy Krassoi, to bring comfort during the cold weather.

The collaboration kickstarted with a deep-dive day at Pepe Saya HQ, where the House Made Hospitality team familiarised themselves with the ins and outs of cultured butter. The resulting cocktails are an homage to the flavours of winter, such as baking spices, toasted citrus, brown butter and booze.

First up is Pear Crumble, a whisky-forward serve that combines Pepe Saya beurre noisette-washed Scotch, pear eau de vie and walnut bitters. The result is a salted, spiced take on the Old Fashioned with notes of fruit and browned-butter.

If Pear Crumble is a dessert cocktail, Toast & Butter is its breakfast counterpart. Built with Pepe Saya fat-washed Widges Gin, which is then blended with marmalade croissant syrup, lemon, orange and buttermilk; Toast & Butter is likened to buttered toast in the form of a clarified gin Sour.

Honey Butter Bee takes influence from the spiced notes of Belgian winter beers. Served tall, the cocktail brings together butter-washed gin, Amaro Montenegro, burnt honeycomb syrup, lemon and aquafaba. Light and surprisingly refreshing, Honey Butter Bee offers hints of gingerbread biscuit in the style of a Gin Fizz.

Finally, Honey Butterbeer Rum is velvety and indulgent, made with aged rum, hot water and a spiced butter batter of condensed milk, golden syrup and Pepe Saya butter. Not only a nod to Hogwarts, but also the beloved caramel slice.

The four cocktails will be available at Lana, Grana, Apollonia and Baptist Street Rec Club between Monday 9 June and Sunday 31 August, each priced at $25.
