Republic Hotel launches lamington cocktail collab

The Republic Hotel in Sydney and cult-favourite bakery Tokyo Lamington have collaborated to create the Lamington Cocktail, a limited-edition creation in celebration of a National Lamington Day.

Created by The Republic’s Beverage Manager James Russell, the iconic dessert has been reimagined as a mix of coconut tequila, dark chocolate liqueur, Bianco vermouth, and chocolate bitters. The cocktail also features a mini lamington garnish from Tokyo Lamington.

A fan of using flavours to evoke memories, James was excited to tackle the classic lamington with this cocktail.

“This cocktail captures the nostalgic flavours of a classic lamington with a new-age, adults-only twist. Lamingtons are like the Warne of sponge cake: not everyone’s cup of tea, but we bloody love ‘em,” he said.

The Lamington Cocktail will launch this Friday, 19 July, in preparation for National Lamington day on 21 July. It will be available venue-wide, including the Sports Bar, Taylors Rooftop and Inna Lounge, for two weeks only.
