Sydney foodie destination opens for business

Featuring 48 traders and 25 cuisines under one roof, the Sydney-first concept is a celebration of food and culture at Paddy’s Markets precinct in Haymarket, on the edge of the city’s CBD.

After undergoing a multimillion-dollar transformation, Hay St Market at Paddy’s is Sydney’s first fully licenced market, which is open seven days a week until late.

Spanning 3000 square metres of Paddy’s Markets and featuring street food and artisanal eats, the new hospitality hub is a bustling mix of day trading and late-night cuisine that is spearheaded by Doltone Hospitality Group.

“We’ve left no stone unturned in creating Hay St Market at Paddy’s – an affordable destination that Sydney can be proud of, where visitors can eat, drink and shop,” says Joseph Murray, group CEO and managing director of Doltone Hospitality Group.

“Inspired by some of the world’s best markets, we’ve built something extraordinary that harnesses Sydney’s cultural diversity, offers a twist on tradition, and taps into our collective love of food and beverage.”

Culinary options at Hay St Market at Paddy’s include Luke Nguyen’s Pho Chu Lap; Mark Olive’s Little Midden; former Rockpool head butcher Tim Casey’s Love Me Tender; Greek eatery Nico’s Cypriot Chargrill; The Fish Co, with fresh seafood and live filleting station; Taco Nixtamal; Burger Box; Mika’s Deli; and El Mercado Spanish Deli.

Cans & Crates features more than 180 canned drinks from around the world, while Traders Bar features nostalgic drinks, craft brews and regional wines.

“While our food offering is phenomenal, we are also excited to bring to life the speciality traders within Hay St Market at Paddy’s,” says Murray.

“Consumers can brighten their day with beautiful blooms from Flowers by Agnes Harrington; you can swing by The Goods for a treasure trove of delights, including artisanal homewares, elegant crockery and captivating books; or visit Urban Farm by Greenspace, where sustainability and produce meets innovation.
