The Guildford Hotel gets multimillion-dollar renovation

The Guildford Hotel has unveiled a fresh new look complete with a reinvigorated kitchen and food and beverage overhaul, following its recent acquisition by Sonnel Hospitality.

The Guildford Hotel is one of three Sydney pubs acquired this year by Sonnel Hospitality, which is a newly-branded hospitality arm of the Nelson Meers Group.

Designed in partnership with H&E Architects, the multimillion-dollar renovation brings a new, contemporary feel to the drinking establishment.

One of the notable features is the addition of a 12.5-metre-long mural to the beer garden, created by Sydney artist Nico Nicoson and design students from the nearby Western Sydney University to capture the cultural diversity of the area.

As the only pub venue in Guildford, the 300-capacity hotel will continue to appeal to sports enthusiasts with a four-metre-long screen among others. Maintaining its family-friendly reputation, the pub also features a low-set children’s corner with toys, crafts, and games.

Formerly, the venue catered to casual dining with classic pub fare, while the new Mediterranean-leaning menu makes use of a flame grill and over-the-coal smoking techniques.

The menu is made up of five main sections, comprising smalls, plates, smoked stuff, over the coals, and burgers and sangas, accompanied by sides and desserts. Highlights include West Coast octopus cooked over a charcoal grill, harissa glazed cauliflower, flame-grilled steaks, chicken and lamb, and a selection of smoked meat dishes.

The menu still features old favourites such as the chicken schnitzel, reimagined with customisable toppers such as Sujuk sausage.

In addition to the revitalised kitchen, the pub also incorporates a cocktail bar. With a mix of alcoholic and non-alcoholic offerings, the menu includes classics like the Lychee Collins and Spicy Margarita, in addition to signature serves such as the Lavender Lush, comprising El Jimador Tequila, Chambord, Alizé and raspberry topped with edible flowers.

In addition to the acquisition of The Guildford Hotel, Sonnel Hospitality also purchased the Australian Hotel & Brewery and the Eastwood Hotel from Redcape as part of its long-term plan to invest in Western Sydney.

Each of these exchanges represent a key step in the group’s plans to deliver exceptional dining, accommodation and entertainment experiences in Sydney’s outer suburbs.
