Pullman Quay Grand Sydney Harbour Hotel has relaunched Hacienda just in time for the summer season.
The level-three bar offers enviable views of the harbour complemented by a new food and beverage program inspired by Latin American elements.
“We envisioned a place … where the worries of the outside world melt away with the first sip of a fresh margarita,” says James Finnigan-Curtis, Director of Restaurants & Bar.
Executive Chef Jiwon Do has collaborated with Rosy Scatigna on the menu, who recently joined the hotel group after time at Aria, Bar Morris, and Shell House.
The pair have put together a food offering designed for guests to share, from poached prawns with espelette pepper to crab linguine with charred habanero. There’s also a club sandwich on offer plus grilled swordfish served with tomatillo salsa verde.
Proof Creative are behind the cocktail list, which covers classics with a twist. The Luz Dorada teams vodka with pink grapefruit oil and Aperol, while the Verde highlights Husk Pure Cane rum, which is combined with cucumber, green capsicum, and lime leaves.
For those looking for a stellar happy hour, Hacienda will showcase three different margaritas from 4-6pm Tuesday to Friday. Guests can choose from a spicy, Tommy’s, or smoky option for just $15.
There’s also a dedicated snacks menu for those not wanting to sit down for a multi-course meal, with options spanning a habanero smash burger, lobster tostadas, and French fries service.
Hacienda is open from 3pm Tuesday to Friday and from midday on the weekend.
