Letra House wine bar opens in Sydney’s CBD

It’s been a fast and furious year for the Love Tilly Group on the expansion front, with one last venue (as far as we know) opening before 2025 comes to a close.

The latest to join the portfolio? Letra House, a Spanish-influenced late-night wine bar conveniently located underneath sibling venue Palazzo Salato.

Guests can access the 60-seater via Kent Street, where they will find a space designed by Studio Vista’s Sarah Watts.

Group Executive Chef Scott McComas-Williams called on his experience working in Spain when it came to designing the menu, which the group describes as “a refined evolution of [the now-closed] La Salut”.

McComas-William worked closely with Executive Chef Alex Major and Head Chef Brandon Jones on Letra House’s launch dishes, which cover multiple formats from individual tapas to small and large plates designed to share – think a Manchego custard and tomato donut; slithers of Jamon Serrano; smoked eel brandade with bouqerones and grilled bread and whole market fish.

Co-Founder Matt Swieboda and Head Sommelier Julie Barbero are behind the wine program, which spans 50 bottles at any one time. “We wanted to create an approachable, vibey late-night wine bar, where guests can come and enjoy a really interesting selection of wine from around the world,” says Swieboda. “Given the entire wine list will be fluid and always available by the glass, we’re keen to encourage more friendly dialogue between guests and the team – especially those curious to try something new.”

Wines have been selected from across the globe, spanning countries including Lebanon, the US, Greece, France, Spain, Italy, and of course Australia. For cocktail fans, Bar Manager Jacob Wicks has curated a snappy list, with the Letra Martini already becoming a signature. The drink is made with a base of olive leaf gin combined with dry madeira and a koji-fermented tomato concentrate.

Letra House is open Monday to Saturday.
