Melbourne rooftop restaurant Mid Air announced

Melbourne’s newest independent hotel is set to welcome a rooftop restaurant just in time for the warmer weather.

Good Food Young Chef of the Year 2023 Nick Deligiannis has been appointed executive chef of Mid Air, a rooftop restaurant located on the 12th floor of Melbourne Place.

The Mediterranean-inspired eatery is the latest high-profile venue to be announced for the hotel, with Ross and Sunny Lusted also opening a ground-floor restaurant and a basement bar in the coming months.

Touted as one of the finest young cooks in the country, Deligiannis has set a precedent for young chefs in Australia and overseas.

After moving to London to work in Michelin-starred Pollen Street Social, Deligiannis returned home to complete kitchen stints at The Recreation Bistro & Bottleshop and Scott Pickett’s Estelle, where he was head chef.

Mid Air will serve breakfast, brunch, and dinner, with dishes inspired by Deligiannis’ heritage.

From Kefalonian hot honey with feta, Southern Rock lobster doughnuts, and taramasalata to golden trout roe, the menu will explore Greek, Turkish, Spanish, and Italian cuisines, with a hint of French culinary elevation.

“Neighbouring the city’s best restaurants, bars, nightlife and retail, [Melbourne Place] will be the place to be, providing guests with a unique lifestyle and cultural experience situated among the best offerings in the city,” says Executive General Manager Tracy Atherton.

For those keen to get a taste of what’s to come, Deligiannis is running a one-night pop-up in Melbourne prior to the restaurant’s opening. The four-course dinner will be a collaborative effort with Steven Nelson from The Recreation Bistro.

Mid Air will open in October, official opening date to come.
