Sydney’s Fortune of War launching new bistro and hotel

Fortune of War hotel in Sydney’s The Rocks is launching a new bistro and reopening its boutique hotel.

From May 2025, the city’s oldest pub will welcome diners to its new 60-seat bistro and launch its renovated 28-room hotel offering.

The George St stalwart was one of the hardest hit venues during reduced trade in the Covid-19 lockdown period but WDS Hotels owner, Steve Speed, said the iconic hotel had outgrown its previous space.

“We’re very much a food and beverage pub but due to the small size of the kitchen, we haven’t been able to provide our dream dining experience for guests, until now,” he said.

“People visit the pub because they want to take their time to read the walls and talk to us about what it’s like to work at Sydney’s oldest pub.”

The venue is also getting a facelift with restoration of the 100-year-old red oak bar, new carpet and a paint job.

“These updates will ensure the longevity of the building for decades to come, but the essence, heart and soul that makes the Fortune of War such a loved and historic place, will remain the same,” Speed said.

“We’re a country pub in the heart of the city.”

The new Bistro 1828 will feature an open-plan kitchen and bar that will be open seven days a week.

“It’s a place steeped in history and now more people than ever will be able to enjoy it,” Speed said.

“Whether they’re sitting at the historic hamper bar, relaxing in the bistro, enjoying the alfresco dining area, staying at the new boutique hotel accommodation, or enjoying all four.”

Fortune of War has recruited former Bistro Moncur chef Mark Williamson who said the pub will also offer a breakfast menu.

“The kitchen will operate from 7am to 9.30pm, seven days a week,” he said.

“We want this to be a true representation of a classic Aussie pub.

“Classics and Fortune of War’s signature dishes like the fish’n’chips and beef and Guinness stew will still take pride of place but we’re also going to slightly elevate the menu.”

While the main bar area is currently closed for renovation, food, drinks and live entertainment are still available in the outdoor area.
