The StandardX Melbourne announces Thai restaurant

Melbourne’s Fitzroy has been chosen as the home of Standard International’s first Australian location of The StandardX hotel concept, which launches to the public on 8 August.

The Melbourne suburb was selected for its rich cultural landscape, with the hotel’s design reflecting the uniqueness of the local surroundings as well as its Hollywood sibling, resulting in a vibrant, engaging space.

The 125-room hotel is home to a range of food and beverage concepts, with new details just announced.

Thai restaurant Bang is an all-day dining concept led by Executive Chef Justin Dingle-Garciyya, who is highlighting iconic dishes from Thailand made with a local twist.

“Bang-on flavours; that’s what Bang is all about,” he says. “I’m excited to showcase bold Thai street flavours with a StandardX twist … using seasonally driven and sustainable ingredients.”

Launch dishes include BBQ pork and octopus skewers with charred pineapple nam jim; blue swimmer crab Pa Tong Ko donuts; slow-cooked Wagyu beef short rib; and double-cooked pig’s head served with pickles, relishes, jams, and roti.

Cocktails are informed by Thai ingredients and flavour profiles. The Dear Angie combines gin with lemongrass, lime juice, Thai basil, and fish sauce, while the Pak Waan teams dark rum with honey, Makrut lime, Thai basil, and lemongrass.

The Roof is an additional hospitality offering from the hotel, and is exclusively available to guests.

The space features panoramic views of Fitzroy and the Melbourne skyline and an exclusive dining inspired by Mercado Medillin.

Bang will operate seven days a week for breakfast from 7-11am, lunch from11:30am-4:30pm for lunch, and for dinner from 5:30-10pm.
