Brae Owner and Executive Chef Dan Hunter is coming to the Sydney Opera House for a four-night special event.
The head of the three-hatted Victorian restaurant will collaborate on the series with acclaimed chef and culinary director of the Sydney Opera House event venue, Danielle Alvarez.
The event, ‘Harvest of Purpose’, will take place in the Sydney Opera House Yallamundi Rooms from Friday 17 January to Monday 20 January. It will feature ethically sourced local and seasonal produce to showcase the duo’s shared philosophy of making ‘food with purpose’.
Brae is an internationally acclaimed restaurant, organic farm, and boutique accommodation in Victoria’s Otway hinterland. Hunter has instilled a philosophy of sustainability at the core of the restaurant.
“My belief is that cooking doesn’t start in the kitchen, it starts on the land. At Brae, we harvest from our land daily and complement that bounty with high-quality, ethically sourced produce from the region,” says Hunter.
“Bringing Brae’s approach to life outside of its own home and capturing a new sense of place has been an enriching experience.”
Danielle Alvarez joined Trippas White Group in September last year, after time at two-hatted restaurant Fred’s in Paddington. She is a cookbook writer and co-host of The Good Food Kitchen with Adam Liaw, and is recognised for her farm-to-table cooking style.
“Dan and I have always shared the belief that food should be created and enjoyed in harmony with nature. Our menu will be a tribute to our beautiful local produce, our Australian landscape, and the people who grow our food and care for our land. We’re excited to bring this event to life and hope it inspires and leaves a lasting impact,” says Alvarez.
“Collaborating with Danielle allows us to meld our shared values and celebrate the incredible people and produce unique to NSW. We look forward to bringing the Brae experience to Sydney, and highlighting what makes this region so special,” says Hunter.
The menu will be accompanied by a wine list curated by Handpicked Wines, a Sustainable Winegrowing Australia certified member.
Guests will also take home a personalised gift that celebrates the event’s theme.
