Fitzroy’s Rocco’s Bologna Discoteca welcomes Samantha Medeiros as head chef

Modern trattoria Rocco’s Bologna Discoteca has appointed Canada-born talent Samantha Medeiros as head chef.

Medeiros comes from Toronto, Canada where she underwent her culinary training before landing roles at her local Italian restaurant and then across France and Hong Kong.

The chef then returned home to Toronto to work as sous, then head chef of local La Palma, before relocating to Melbourne in late-2022.

Medeiros’ new role at Rocco’s Bologna Discoteca sees her go full-circle to return to working with Italian cuisine.

“When the opportunity to become the head chef here came up, I knew I had to throw my hat in the ring… I somehow always end up gravitating towards Italian food, and love that Rocco’s has that backbone, but with a creative and interesting twist,” says Medeiros.

“I’m excited to work along such a talented team, and for all these new and exciting opportunities!”

The chef says she has been following Rocco’s via social media before landing the role and has “always loved their direction and clear sense of vision” as a venue.

Medeiros hopes to bring her worldwide experience to Rocco’s and produce a menu that provides guests with something “familiar but new.”

Medeiros’ a la carte and chef’s selection menus are now available at Rocco’s Bologna Discoteca, 15 Gertrude Street, Fitzroy, Victoria.
