Sydney’s newest Spanish-inspired bar lands in Pyrmont

The team behind Accor Hotels’ Handwritten Collection has opened Percy, a 50-seat Spanish-style tapas and wine bar in the heart of Pyrmont.

The menu offers a trip across Spain, with dishes inspired by the Basque-style pintxos of San Sebastian and the small tapas plates of Barcelona.

Set in Pyrmont’s historic Hotel Woolstore 1888, the revamped venue presents a low-lit, cosy ambience.

Percy’s Executive Chef Eli Lozada (formerly Rockpool Dining Group, Epicurean, and Cirq) and Chef Rosy Scatigna (formerly Lune, Milan; The Hand & Flowers, London; Bar Morris, and Hacienda, Sydney) collaborated to develop the menu.

“Percy’s menu is a representation of my experience from San Sebastian,” says Scatigna. “I spent days wandering pintxos bars, tasting fresh flavours and feeling that electric buzz of people enjoying their dining experience, sharing good food and wine. We’re bringing that vibe here.”

Highlights include Percy’s Gildas – skewers with pickled guindilla peppers, Manchego, and olives; padron peppers with labneh; pan con tomate; croquetas del dia; and a fried squid bocadillo with saffron aioli.

Larger options include flank steak with mojo verde and spatchcock picante with sobrasada jus. Dessert options include crema Catalana, a typical Catalan crème brulee infused with citrus and cinnamon, and lemon sorbet with Arbequina olive oil.

“Spain has some of the best produce in the world, so it was only right we sourced the best ingredients we could find for Percy’s menu. Every dish has been designed to give that authentic Spanish flair. It’s all about fresh, traditional flavours that have been chose to go perfectly with Percy’s list of Spanish wines,” says Lozada.

The wines Lozada mentions are largely organic and minimal intervention wines that were sourced in collaboration with Spanish wine expert Scott Waley from The Spanish Acquisition.

Cocktails include the Riojan Sunrise (spanish gin, Gran Zinio cava, and Hartshorn Sheep whey vodka); and the Margarita Picante made with Tromba Blanco tequila. Barcelona’s iconic Estrella beer also features on the menu, alongside Spanish sherry and spirits.

“We’re keen to deliver the warm hospitality of Spanish culture to Sydney, creating an inviting and cool ambience for our guests,” says Hotel Woolstore 1888’s General Manager Roya I’Anson.

Percy is open 2-10pm Tuesday to Saturday and happy hour runs from 3-6pm on weeknights.
